I noticed that the character of Sauron didn't exist until after Tolkien
started to write the story of the fall of Numenor.
Who, then, did Beren and Luthien fight in the early drafts?

Tevildo, Prince of Cats (no, really).

See _Lost Tales_ for details.

Tevildo > Thu > Gorthu > Gorthaur > Thauron > Sauron

All of these are really different names for the same character except
the first. Tevildo, the Prince of Cats, who Beren and Luthien first
faced, contributed various details to 'Thu' but was clearly a different
character (and not the only 'source' for 'Thu').<!-- ~MESSAGE_AFTER~ -->

Tevildo, Prince of Cats, and then Thû, the Necromancer.

Thû was evil out of revenge. Have you ever seen how angry a shaved cat
is?

Actually this is not quite true. The character of "Thu" (the
precursor to Sauron) appears in the Lay of Leithian, doesn't it?

In the earliest version (BoLT) there is Tevildo, Prince of Cats, who, while
I wouldn't say is a proto-Sauron, occupies that place in the story.

Later came Thu, which is an early variant of Sauron.

Cats are easily provoked to anger, shaving them is not
necessary.

My favorite method is to chase the cat with the
remote-control Chrysler PT Cruiser.

This is why one form of execution in the ancient world was to wrap up the
miscreant in a burlap bag with a few cats, and then toss the bag into the
Tiber. Mrowr!
