Where did Elves and Men come from, in Tolkien's world? Was it an
evolutionary process? Did Eru create one couple of each? It is all so
mysterious in the Silmarillion...

An elven nursery tale which Tolkien wrote says there existed 144 elves
at first, which makes 72 elven couples. They didn't awake all at the same
time -- 3 couples were the first to awake and then took the subsequent
waking elves under their respective following, something that caused
the first division of their elven kindred into three major groups.

Mankind's creation is never detailed, but it's clear enough that there existed
more than one mortal couple at the beginning.
