After the White Witch killed Aslan, why didn't she reinstate the freeze
spell Aslan had broken?

At a guess: it took a long time to cast; days, perhaps weeks or even
longer?
Also, can't you find anything else to nitpick minutely but Narnia?

To understand this question is to understand how the winter began in
Narnia in the first place. I do not know how the winter happened but I
do know that the White Witch's power was breaking as soon as the
children entered Narnia and activated the prophecy.

As you see the "killing" of Aslan did not quite work out as the White
Witch went against the Deep magic of the land of Narnia. As Aslan did
not die hence the power of the White Witch over the land of Narnia
remained undecided.

Aslan certainly looked dead to me! Susan and Lucy were in contact with
his body for most of the night, so would have detected any signs of life
(breathing, heartbeat, continued warmth, etc).

Death was unable to touch Aslan as his "death" went against the Deep
magic, hence the White Witch's power remained in limbo.

I wonder how Narnia's fresh water fish survived with the rivers and lakes
being "frozen solid".

Should that have tipped off the witch that Aslan might not be completely dead?

In many cases without ever having watched them.
