Most likely, it was published before 1975.

The first two pigs don't get eaten up - they just run away and never
appear again. The pictures look like the work of a certain MAD
Magazine artist - in bright colors. (Not Don Martin, Al Jaffee, or
Sergio Aragones, I can assure you.) When the second pig asks for the
twigs, the man says: "Gladly, but do you really think a house of twigs
will be strong enough?" "Of course!" said the foolish pig.

I forgot to mention: this one first appeared in the mid-1960s

I don't know what makes you say that - according to Abebooks.com, Jon
Scieszka's book was published in 1989. Not to mention that the pigs DO
get eaten, IIRC.

Again, the one I'm thinking of is more than 30 years old. (Lane
Smith's illustrations don't exactly remind me of old MAD
illustrations, either!)

I hope someone remembers it.

In the meantime, here's a Fritz Freleng animated cartoon that's not as
well-known as some - but it should be!

James Marshall? Depends on which Mad Mag artist you're thinking of, too.

I tried to find the 2003 book "Mad Art : A Visual Celebration of the
Art of Mad Magazine and the Idiots Who Create It" by Mark Evanier at
my library, but it looks as though someone stole it (it hasn't been
borrowed for four years).

So I poked around elsewhere and one artist's work that resembles my
dim memories is the work of Mort Drucker (when he wasn't trying to
draw too realistically, that is).

Here's some of his work:
