There is the Blish series for TOS that can occasionally be found in used
bookstores. He worked with the scripts and not the finished product, so
some of the stories are slightly different than the TV episodes. I have
read that he wrote them without ever viewing an episode, but I don't know if
that is true or not. Also he added in a few things from his own science
fiction work here and there. There are about twelve numbered books, plus a
special one with the two Harry Mudd episodes and an original Mudd story. I
believe they were also combined and published in a three volume set for the
25th anniversary.

Dean Allen Foster (or is it Allen Dean Foster, I get it mixed up) did the
episodes of the TOS animated series. Harder to find than Blish. He expanded
greatly on every episode, also occasionally putting in some inside stuff
from his own science fiction.

You may also want to check out Larry Niven's The Slaver Box short story
which was the not ST, but was the basis for the Pirates of Orion animated
episode.

Other than an occasional novelization of an individual episode(s), usually
season enders, none for the other series. I did find two script books, one
featuring episodes with Q, the other 7 of 9.

And there's also the Dominion War series, which I believe is a novelization
of the entire Dominion War arc from DS9. Besides that and the Blish and
Foster works, the following episodes appear to be the only other episode
novelizations:
