Dune - Frank Herbert
Hyperion - Dan Simmons
A Canticle For Leibowitz - Walter M. Miller Jr.
Foundation - Isaac Asimov
Ringworld - Larry niven
The Shadow Of The Torturer - Gene Wolfe
Ender's Game - Orson Scott Card
Citizen Of The Galaxy - Robert A. Heinlein
Waystation - Clifford D. Simak
Slan - A. E. van Vogt

Google for "sci-fi top 100" for more.
And don't ignore short stories, some of the best sci-fi is to be found
there. Gardner Dozois does a good annual collection of contemporary stuff
but any old volume is bound to contain some gems.
